The only rattle I get is when the stereo is turned up and the bass rattles the drives door panel. Sorry I'm not much help.
It sounds like there is something under the dash or possibly in the glovebox making the noise.

I had the same issue with the damn rattle as well. It sounded to me like it was coming from the glove box area, the area under the dashboard, or somewhere behind the pocket in the center console under the radio/navi/hvac area...however, when I got home I started wondering if it may be coming from under the passenger seat and the noise is just channeled out wards towards the floorboard and to the glove box area. Well, low and behold, I tried to replicate the rattle by pounding on the passenger seat and sure enough, the rattle was located somewhere under the seat. I looked and noticed that some of the seat's wiring/cables were vibrating with the car's movements and rattling against some of the electronic boxes (or whatever those little black box- looking things are). The seat's cables/wires seem to be placed waaaay too close to those black boxes. What I did was to bend the support plastic or metal tabs that these boxes are bolted to far enough from any of the seat's wires/cables as to keep them from rattling against each other and creating that awful rattle. Walla!! It worked. Rattles be gone! Give this a try and see if it may be the same issue. Maybe I can post a picture of what I am talking about.
That sounds not to match my concern as I can hear it coming from between dashboard/ windshield area when I sit ON the passenger seat.

I have a rattle, very high pitch - like crackling/ticking rather than clunking - coming from my passenger side dash area.
I have a feeling it's the glovebox rattling slightly. I will open and close it and it stops for a short time... and then I tried with it open and it stopped while it was open.
So, glovebox door rattling on dash...
The Manual case and my sunglasses case in the glovebox making the noise...
Or having the box open changes the stress on the dash in that area and silences whatever it is...
I think it's just the box door rattles against the dash slightly.
I'm going to put some foam weather stripping along the inner edge to see if it helps.
I DO have another rattle that bothers me though.
Drivers door right behind my head... corner of the lower window area. Like a clicking rattle - I think it's the door panel against the window glass or something. Putting outward pressure on it stops it. Whether resting my arm (or not) on the door doesn't change the rattle (downward pressure).

For two days I was hearing a rattle coming from the passenger seat. I thought it was the headrest, so I would pull it up, push it down and it would not stop. I would hold it and it would stop. Two days breaking my head looking for the stupid source of the awful noise. Until I remembered that I had a small umbrella in the pocket seat. As soon as I touched it, problem solved. Needless to say I took the damn umbrella and threw it on the back seat. Then later today another rattle, and it seemed to come from the same side, so I turn off the radio and started to look. So what was it? Center console, top drawer. My two iPods were hitting each other. So just keep in mind that this car has a lot of hard plastics and anything that hits plastic will make a rattling sound. Make sure to place things right and you should be OK. As to your rattle, check what is inside the glove box. I had my iPod and AUX RCA cables loose in there, and they too rattled. Now I keep them in a plastic bag, no rattles.

It is not the passenger seat, headrest or the compartment.

I noticed a little rattle the other day from my passenger side. I thought it was the glovebox, or something in the console - it seemed to be coming from that area.
So dangerously, while driving I decided to stick my head closer to the area to see if I could pinpoint it.
Turns out the plastic extender piece to the passenger side sun visor was pulled out ever so slightly, and caused a little rattle.
tl;dr check the passenger sun visor
A noise at the the dash/windshield location says "chassis flex" to me. I've read that the Veloster has a fair amount of flex due to the large cutouts for doors/sunroof/hatch.
Adding additional reinforcement (strut bar or chassis bar) may eliminate the noise. Simply adding some foam somwhere in the area is certainly cheaper and easier, but getting at the source of a noise in this area is pretty difficult.
Just my thoughts...

I had the rattle around the glove box. Go under the dash on the right side youll see like a module. Tap it, and ull see that it gives a similar rattle. I moved it a bit and so far its stayed pretty quiet.
Oh God..... the rattles..... mine has also developed it in the same area which sounds a lot like the glove compartment. What is my solution? I ignore it and count the days until I trade this vehicle in. If take it to the dealer, nothing will ever get fixed.
No.. wait a minute... it will get fixed when I trade it in lol.
I've had a few rattles develop and then go away. The only consistant one I've had is somewhere in the both the driver and passenger door panels when the bass hits.
After having some time to remove the windshield that sits on the windscreen, I could have a look into the airduct leading the air inside the car. The air duct consists of 2 plastic pieces, one sits straight on the firewall and has a foam all around, so the rattle does not come from here, but then they put another plastic duct around that leads the air onto the fan and these 2 parts are moving on each other causing that scratching noise. well, what I now did was spraying some WD40 on that whole area where those 2 parts are sitting on each other and the noise is gone.

I've gone slightly insane trying to pinpoint the rattle but all these suggestions at least give me some place to start.
VelosterFan, what do you mean about what I bolded? Is the fix something that can be done easily? It sounds like you REMOVED your windshield to get to the source of the problem rattle you heard?? How exactly would you spray WD40 - in what location? Did you get to see this location from the engine compartment?
I have similar noises coming from the base of the windshield on the driver's side. After looking around, I found the noise to be coming from the plastic cover at the base of the windshield. It squeaked when I moved it with my hand. The A pillar cover also would make some noise if moved with my hand. I have only had these problems come up with cold weather-the cold weather makes things contract thereby leaving more gaps. I had a similar problem with the tailgate of my Hyundai Touring during cold spells as well.
I have/had three rattles/creaks on my 815 mile V:
1) Something loose in the steering column...sounds like plastic knocking on plastic. Intermittent.
2) Rattle coming from shifter/center console area. Solved - Inside the faux leather "pods" (I dunno what to call them; On either sides of the mission plate area...) there was a machine screw just randomly in there flopping around.
3) Glove box...the f***ing glove box. It squeaks quite a bit. Put some "Frost King" foam tape around to maybe snug it up. 3/16" was too thin to do anything. Trying 5/16"...

I test drove a used one (656 miles on it) that had a rattle like this. I decided to pay a little more money and get a brand new one, knock on wood no rattles so far.
